Apple, Cranberry stuffed Porkchops with Walnut Crumble

I mostly eat beef, veal, chicken, and fish. I love pork but I don’t eat it that often. Don’t ask me why cause I don’t know, I just don’t. I decided to add a walnut topping. So I crunched some walnuts added salt and pepper and roasted them, put them on top and BAM! I decided to do walnuts because a few weeks before I made this, I went out to eat and got a Spinach apple, walnut salad. I really liked it (not as much as ceaser).  The walnuts gave a crunch texture which was awesome. This whole dish is awesome! If somebody asked me what my favorite part of this dish was I would say the fact that it is stuffed. Your mouth dose not expect it and you are eating that nice meaty juice flavorful pork chop then you get the juicy flavorful filling and the crunchy walnut topping. Oh yeh did I mention the glaze? So y’all know how if you cook meat a lot of the juices kind of come off. That is why if you cook it to long then it is dry. Well the juices that come out of the apple and pork are made into a sauce! I know I know, no autographs, hold the applause, brilliant if me!!!!!!  So you have so many easy elements that are super easy but super flavorful. There is no I in team and all these things work as a team! FLOWER POWER!!! I know its random but it came to my mind! So y’all know how Worst cooks in America comes on tonight! Well All the past seasons were on and I was watching it last night. One episode Bobby and Anne made pork chops. They didn’t tell them what anything was or was made out of, no recipe. They just gave them a dish and told them to replicate it. That is why I thought of putting up a pork chop recipe. Those looked like complicated pork chops. These are nice and simple.So I have been reading my e-mails and request, people have been asking for me to give an idea for a side. I love to serve this with steamed green beans with butter,salt, and pepper. But my favorite thing to serve with these are mashed potatoes. There is nothing better then mashed potatoes and a sauce or gravy. I can eat it every day 3 times a day. If the potatoes are seasoned right then I can eat a whole 5 pounds. Once my dad made 5 pounds of mashed potatoes. He seasoned it great and put butter and cream in it and it was so good. I ate probably 3 pounds of it!  They were good potatoes! With some gravy to give it more flavor it is to infinity and beyond!! I am watching toy story with some family friends kids and Buzz Lightyear just said that. Pork has a salty flavor so the sweet filling and the smoke of the walnuts. I’m loving it!!! This dish just has so many good elements to it! OMG guess what!!!!!!! My Dad always told me, “the best pork chops are the ones stuffed with apples”. I will tell you, he is right! Not to change the subject but has anybody ever seen the parent trap? The older virsion made in 1961? I’m watching it right now, they are cooking trout at the camp. I don’t know why I brought that up but I”m watching it and I will tell you, its really funny! This move never gets old!!Anyway,

Look at those apples!!!!! Filled with beauty! They are so nice, fresh from the farm! I have like 2o apples! I’m trying to make a bunch of apple dishes!!!!!!!!

Prep- 50 minutes

Cook- 45 minutes

Ready in-1 hour 35 minutes

Ingredients- 

2 tablespoons butter

1/8 yellow onion, minced

1 Granny Smith apple – diced,peeled,corred,and washed

2 stalks celery, chopped finely

1/4 cup dried cranberries

1 tsp salt

5  boneless pork chops  

1 cup apple juice

1 tablespoon cornstarch

2 tablespoons brown sugar

Salt and pepper

1/2 tablespoon unsalted butter,

1 1/2 cups walnuts, smashed and crumbled

Directions- 

Preheat oven to 350 . 

In a dutch oven Melt 1 tablespoon butter over medium heat. Cook onion in butter until the onions are very soft and begin to brown. Remove from heat. Stir in apple, celery, and dried cranberries. Season with salt.Lay each chop flat on cutting board, and with a sharp knife held parallel to the board, cut a pocket into the pork, leaving three sides intact. Stuff each pork chop with apple/cranberry mixture.Melt remaining butter in the Dutch oven over medium heat. Pan-fry chops in butter for two minutes on each side. Cover, and bake in preheated oven for 45 minutes.Transfer chops from pan to a plate, and cover with tin  foil. Place the Dutch oven back on the stovetop over medium heat. In a small bowl or measuring cup, stir together apple juice, cornstarch, and brown sugar; pour into Dutch oven. Reduce liquid volume by half, stirring frequently. Season to taste with black pepper. Serve this apple glaze over pork chops.

In a small saute pan over medium heat melt the 1/2 tablespoon of butter. Cook walnuts until crunchy and golden brown, season with salt and pepper

Rub over each pork chop

Serve with sauce and enjoy!!!!!!!
