Who doesn’t love some good old buttermilk pancakes?? These are no ordinary buttermilk pancakes, they are extra fluffy and taste way better than any other buttermilk pancakes. And I am not just saying that cause I made them. But no joke, these things are so good, not as good as chocolate chip pancakes, but chocolate chip has chocolate in the, it’s really no comparison. But with that said, these are still amazing!!!

So you know in the winter if it snows a lot you get a delay? Well I hate those. They completely mess up my schedule, and whats the point of having like 30 minute classes and lunch as soon as you get to school. I go to wake up at 6:30am on a daily basis to go to work, then I leave. But with these delays, my family have to go to work if they can’t get off, me I can just reschedule my day. I don’t like to but you do what you gotta do. But there is one good thing about these delays, I have to stay home for an extra like 2 hours. That is a perfect amount of time for making some fresh and fluffy buttermilk pancakes! I bake a lot so I have buttermilk just in my house, if it’s snowing and you don’t have buttermilk and can’t get to a store, just put in regular milk. They will not be buttermilk pancakes, they will be plain. But they will still be extra fluffy and taste really good!!!

I like my pancakes (and waffles) really fluffy. So I put in extra baking powder and adjusted the other ingredients and came up with a really fluffy pancake!

This batter makes 10 servings of pancakes. If you can’t tell, that is a lot of pancakes!! You can freeze the batter and make it at a later date, or you can make all the pancakes and freeze the pancakes. Or you can keep it in the fridge for a few days. If you want to make the rest of the pancakes in the next 3 days, put the batter in the fridge. If you want to make it later, put it in the freezer. If you look down at the ingredients, everything has like a cup and a tablespoon, sorry about that, its what you gotta do to make them taste good!

I make a big breakfast once in a while, and I admit, I go all out. I serve this with scrambled eggs, fruit, bacon, ham, sausage, and muffins. Any of those will be good with it. I don’t do this but my grandpa used to, I would make sweet sausage, like marinate it in maple syrup and cook it. And he would put it in the middle of his pancake and eat it like a omlet. Actually,m it taste really good with a buttermilk pancake.



  • 4 eggs
  • 1 1/4 cup milk
  • 1/4 cup and one tablespoon of butter
  • 4 cups and 2 tablespoons buttermilk
  • 4 cups and 2 tablespoons all-purpose flour
  • 1 tablespoon and 1 1/4 tsp of baking soda
  • 1 tablespoon and 1 1/4 tsp of baking powder
  • 1/4 cup sugar


  1. In a large bowl, whisk together the eggs, milk, butter and buttermilk.
  2. Combine the flour, baking powder, baking soda and sugar, stir into the wet ingredients until blended.
  3. Heat a skillet over medium heat, and spray with cooking spray. Pour 1/4 cup of batter onto the skillet, and cook until bubbles appear on the top. Flip with a spatula, and cook until browned on the other side. Do the same with remaining batter.



Birthday Funfetti Pancakes

Happy Birthday! I first made these fora girl who was turning 12. She has a late August birthday so she had to go back to school a few days later. When I asked her what she wanted for her birthday, she asked for makeup and clothes.  Talk about puberty!! She was so concerned on looking perfect at school and being all popular. She never card until then and I was like, what just happened to you??!!!! That is when I decided to make pretty pancakes!! If people want to look good, why can’t pancakes? I just made my normal favorite pancake mix then added sprinkles. I was nervous cause it was her birthday and if I messed this up it would be a waste of food and money. I like my pancakes fat, thick, and fluffy. That is just what these were!! They were amazing! Thick light and fluffy!!! It looked as good as it taste!! Oh and tip, when I say sprinkles, I mean sprinkles not sugar crystals.

She had no idea I was making these, I didn’t even until I saw her oufit that day. But it is the best surprise!! Any surprise on your birthday is good but breakfast starts your day great. Everything is better with sprinkles! confetti screams birthday to me. That is why confetti cupcakes are called birthday cake flavored cupcakes, not confetti

Now that school is coming closer, it is way harder to make breakfast for my family. My family eats cereal every morning. But people like me, with weekday birthdays every year, its gets annoying having cereal everyday. These are quick and easy and they are a life saver! They taste good, then they look birthday spirited. As much as I love my family, I also love my sleep and I don’t want to be waking up at 3am making pancakes. These take less then 5 minutes to prep and no more then 10 minutes to cook and cool all them!  So ba-bam perfect birthday breakfast!!

Pancakes with sprinkles, presents, birthday cake, and balloons!! What ca be better?


  • 1 1/4 cups all-purpose flour
  • 1 1/2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 1/3 cups milk
  • 1 egg, beaten lightly
  • 3 tablespoons vegetable oil
  • 3/4 tsp vanilla extract
  • 1 tsp vegetable oil
  • 1 cup Rainbow sprinkles


  1. Whisk together flour, sugar, baking powder,and salt in a bowl. Whisk in the milk, egg, 3 tablespoons vegetable oil, and vanilla extract . Let the batter stand for 5 full minutes for extra fluffiness.
  2. Add in sprinkles
  3. Heat a skillet or griddle over medium heat, and brush with 1 teaspoon vegetable oil. When the oil shimmers, slowly pour about 1/4 cup of batter into the hot pan. Cook until bottom is browned, about 2 minutes, then flip over and cook until the center of the pancake is set and the other side is browned, about 2-3 more minutes.

Who can resist a pancake?? A light fluffy pancake warm pancake!! A great way to start off your day. There are so many pancake recipes you might ask ” what is different about this one?” Well I will tell you, I don’t know. I honestly don’t. I don’t know why, but they are so fluffy ans soft and taste amazing!  It so light. I hate blueberries, they have an annoying texture and I don’t think they taste that good. But I will say, I love an old fashion buttery fluffy pancake. But the blueberries taste great with the pancake. I am not gonna waste my time telling you how it taste cause everybody knows how a blueberry pancake taste.

So my nephew is going into middle school. He is the most shy person I have ever met!! Walks with his head down. Just kidding, he is loud and proud and is excited to get out of middle school. For 6 years he didn’t go with the flow of elementary school, but him and middle school mix well. Like pancakes and blueberries.

Something about the juicy blueberry goes so good with the fluffy buttery pancake. I wanted to make something when they came down to my house for a few days. I looked in the fridge and found 2 pints of blueberries. I wanted to make something with those cause nobody in my family likes blueberries. (I have no idea whey they were in the fridge) He loves pancakes so I just popped them into my homemade batter. The best batters are homemade. It always has a weird sourness when I make it from the box. So until I find a good box mix, Scratch it is!

If blueberry pancakes aren’t good enough for you, top it with whipped cream and fresh blueberries or maple syrup. personally, I think whip cream on pancakes is a must!! It just goes together, I don’t know who thought of whip cream on pancakes but their a hero! Like waffles, pancakes must have whipped cream!

I made these pancakes with a tablespoon of sugar. You can add more or less but it taste best with a tablespoon, perfect pairs

Like my nephew and middle school!

  • Makes 12 pancakes
  • Prep- 5 minutes
  • Cook- 20 minutes
  • 25 minutes in all


  • 1 1/2 cups flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tablespoon white sugar
  • 3 tablespoons butter, melted
  • 1 egg
  • 1 1/4 cups milk
  • 1 1/2 pints blueberries
  • Cooking Spray


  1. Sift together flour, baking powder, salt, and sugar in a large bowl.
  2. Whisk in melted butter, egg, and milk until combined.
  3. Add in Blueberries
  4. Let batter rest for 5 minutes.
  5. Preheat a large skillet over medium heat. Spray with the cooking spray. Pour
    batter into the hot skillet( I did about 1/4 cup batter for each pancake) Cook for 2- 3 minutes, . Flip and cook until golden, about 1-3 minutes.

Bacon, Potato, and Cheddar Frittata

So let me tell you a little story. Bacon and Potato were best friends. They couldn’t be separated. They were just so good together. One day a new boy came along. They instantly became Best friends, the end! I’m a beautiful story teller. I got this idea because my too favorite frittatas are a bacon and cheddar and cheddar and potato. So I did what I always do, mixed them together.It worked!! The juicy meaty bacon, creamy and sharp cheddar cheese, and some warm soft potatoes all inside a delicious egg!!

I love making a warm breakfast for my family on Sunday mornings. When ever I make this I serve it with biscuits and butter, and a fresh fruit salad. It is so nice to have a nice breakfast on a warm day. Its incredibly easy and delicious! When ever I  make hash browns, bacon, and eggs but have it all seperate, its good. But this way you get the juicy bacon, sharp cheddar cheese, flavorful eggs, and warm and soft ice cream.  Awesome combination!! I’m a genuis!! God, I’m cocky.

There is nothing better then a warm breakfast on a Sunday morning and a nice happy family!! Like thhey say, breakfast is the best meal of the day!! If you have a terrible breakfast, your gonna be in a bad mood the entire day because breakfast sets the mood for the day. If you have a nice breakfast like this, you will be in a great mood the whole day.

So, how is everybody doing?? I have been waking up early every day to go running, only a mile. nothing huge. Trying to get in shape for my upcoming volleyball season. And cooking some new things. I am really into baking. I have been trying so many new things. My favorite so far was, I don’t know I like everything!!
Lets go before  I fall asleep, I am super tired!!


  • 2 large potatoes, peeled and shredded
  • 5 slices Bacon
  • 1/2 cup shredded Cheddar Cheese
  • Salt and Pepper
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 eggs, beaten


  1. Preheat the oven to 400 ]
  2. Heat oil in a 12 inch skillet over medium-high heat. When the skillet is hot, add the potatoes. Five minutes after adding potatoes, add bacon and cook 10  minutes. Reduce heat to medium, and add onions. Cook, stirring, until softened. Season with the  salt and pepper. Pour eggs over the potatoes and onions.
  3. Place the skillet in the oven for about 10 minutes, or until eggs are firm. Remove from the oven, and sprinkle shredded cheese over the top. Return to the oven for about 5 minutes, or until cheese is melted.

French Toast Casserole

I love french toast!!!!!! At first, I was never a fan of taking such a delicious classic and turning it into a casserole. But that god I did!! Its delicious It has all the flavors and textures of french toast but you get all of it in one single bite!! AMAZING! I was so surprised how good it was when I first made it. Now I make it almost every weekend! It is so easy!1 You just throw stuff in a pan then put it in the oven!! I love easy things that taste good. I’m a very lazy person!!

I have been jogging every morning lately and I hate running so it puts me in a bad mood. So what I do is make this before I jog, throw it in the oven, jog for 20 minutes and when I come back, there is a nice smell and a amazing casserole!!

Now, lets talk bread. The type of bread is your decision but I have a few tips. Don’t do a really soft bread because when all the flavors soak in, it will get soggy. I suggest french bread. It is hard but when the milk soaks in, it won’t get soggy just soft. But cut off the crust.

Say you don’t plain to make this but you are in the mood for it one morning. You might be able to still make it. Besides the bread, you will probably have these ingredients in your house on a ordinary basis. Its so nice to not expect but get it before when you wake up.

So, lets start!


  • 5 cups bread cubes
  • 4 eggs
  • 1 1/2 cups milk
  • 1/4 cup white sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 tablespoon margarine, softened
  • 1 tsp ground cinnamon


  1. Preheat oven to 350
  2. Lightly butter an 8×8 inch baking pan. 
  3. Line bottom of pan with bread cubes. In a large
    bowl, beat together eggs, milk, 2 tablespoons sugar,
  4. salt and vanilla.
    pour egg mixture over bread. Dot with the margarine,let sit for 10
  5. Combine remaining 2 tablespoons sugar and 1 tsp cinnamon and sprinkle over the top. Bake in preheated oven
    about 45 to 50 minutes, until top is golden.

Coffee Cake

OMG!!! This is better then any store bought coffee cake you will ever try!!!! Its moist and has the best topping!! This is no ordinary coffee cake. This has layers of goodness. I wanted to make sure the flavors of the cake with the topping is balenced. So I put half the cinnamon, sugar mixture on top and half in the middle of the cake. This way, in every bite you will have more then a little of the cinnamon mixture.

Really fast look at the ingredient list.  You see all the pudding mixes. That goes in the cake. Imagine how moist that cake will be when all that pudding soaks into it. You would have to leave it in the oven for a whole extra day to make this cake be dry!!

Its simple and easy!! I just woke up. I’m tired and lazy, I don’t want to make a whole cake and topping. So I used  a box mix but by adding other flavors, It is moist and flavorful. For a while my family made another coffee cake recipe. When we first tried this one it was like heaven jut fell on earth. It was beyond delicious. It is packed with flavors. No, I’m dead serious you literally pack it with flavors cause you layer it. LOL!

I love making this when I have people sleeping over. It is an easy effort but it is a nice little treat. Plus it makes me look good when I make a hot and fresh breakfast. But mostly cause its a delicious treat!


  • 1  package yellow cake mix
  • 1  package instant vanilla pudding mix
  • 1  package instant butterscotch pudding mix
  • 4 eggs
  • 1 cup water
  • 1 cup vegetable oil
  • 1 cup packed brown sugar
  • 1 tablespoon ground cinnamon


  1.  Preheat oven to 350 
  2. Grease a pan, or a 10 inch Bundt cake pan. 
  3. In a medium bowl, stir together the cake mix, vanilla pudding mix, and butterscotch pudding mix. Add the eggs, oil and water, mix until well blended. 
  4. In another bowl, stir together the brown sugar, and cinnamon . 
  5. Pour half of the batter into the pan, spread evenly. 
  6. Sprinkle with half of the cinnamon mixture. 
  7. Cover with the rest of the batter, and sprinkle with the rest of the cinnamon mixture. 
  8. Bake for 20 minutes in the preheated oven, then turn the oven down to 325 degrees Bake for an additional 35 to 40 minutes.

Waffles with Fresh Strawberries and Whipped Cream

I love waffles. I rather eat them for breakfast
then any thing else. They are easy filling and delicious. I love them.
If you have ever put whipped cream and strawberry’s you probably know
it is the best waffle you can ever eat and if you have never had it you
are completely missing out. You have a sweet fluffy waffle and some
whipped cream and fresh strawberry’s OMG it rocks. I wish I had time to make it every day and I would soooooooooooooooooooooooooooo eat it.

My family loves any warm
breakfast you throw at them but this is a favorite.
You will love this!!!!!!!!!!!!!!!!!!!!!!! (Now I want a waffle) this is
one of my favorite waffles and it will be yours your friends and your
family to. All the ingredients in this are put in so it will be a sweet
fluffy waffle and it worked. I will tell you there is nothing better
then waking up on a Sunday morning and having a nice and yummy warm
breakfast which is the perfect definition of this. I will always be .I
am always looking forward to the weekend so I can make and eat this
because that is how good it is.  I know you will like this and it saves
you time and money because now you do not need to go out to a restaurant
to eat a perfect waffle.

Sometimes, my family will buy frozen waffles. Mostly over the school year when I don’t have time to make a hot breakfast every day. Well I really don’t like them. They are made in the toaster and they don’t taste good. They are not light and fluffy like they should be. So I made these to tell my self waffles don’t really taste like that. Once I made and ate them I felt better.

When I was younger me and my family would go strawberry picking. We went to this farm that was 2 minutes away. I have still never tasted a strawberry as fresh, sweet, and juicy as them. We would get up to 17 pounds of strawberries. We used to make a lot of waffles when we did that I would put a bunch of strawberries on  top, best breakfast ever!!

Lets do it!!


  • 2 cups of flour
  • 1 tsp of salt
  • 4 tsp  of baking powder
  • 2 tablespoons of sugar
  • 2 eggs
  • 1 1/2cups of warm milk
  •  1/3 cup of butter (melted)
  • 1 tsp  of vanilla
  • 2 cups of fresh strawberry’s washed
  • 1 can of whipped cream


  1. In a large bowl, mix together flour, salt, baking powder and sugar; set aside. 
  2. Preheat waffle iron to desired temperature. 
  3. In a separate bowl, beat the eggs. 
  4. Stir in the milk, butter and vanilla. Pour the
    milk mixture into the flour mixture; beat until blended.
  5. Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. 
  6. Cut the washed strawberry’s and put them on the waffle along with the whipped cream
