Chicken Pot Pie

I love having family dinners. Like the Whole family, aunts, uncles, like Thanksgiving but not. I would way rather host these dinners then go to one. Personaly, I don’t like anybody bringing anything I like to make it all myself. I live in Maryland, most of my family doesn’t. We have Boston, Calfornia, Virginia. I don’t want them bringing food from there! I know, I’m kinda a control freak Every year I always make this huge roasted turkey. But, I wanted to do something different. So I decided to roast a chicken, and make a homemade chicken pot pie.

I did the chicken with gravy and mashed potatoes so I did that too. When the pie was 2 minutes before being done,  I slapped a ton of mashed potatoes on top. I made them while the pies were baking. I made them normally but it was o good when it got on the pie because it baked on top.  Its like a merangue on a chicken pot pie. But that wasn’t enough mashed potatoes for my family. So I made more and tripled my original recipe. I madelike 15 pounds of mashed potatoes, that a lot of mashed potatoes!! My mashed potatoes are known in my family. I put so much butter and cream in them and season them with so much salt and pepper. I do gotta admit, I make good mashed potatoes. You don’t have to put them on top I just prefer too.

My favorite part of the dinner is the chicken pot pie. Its always nice. I made a bunch of big pot pies cause I didn’t have enough mini pie pans to make indivisual ones for everybody. If you do want to make mini indivisual ones then you can use the same recipe, I have no idea how many it would make. But it is nice to have mini pies. The recipe makes 2 big ones so if you made mini it would probably make 8. I just quickly did that in my head.

I’m giving you the recipe for the pie without the potatoes by the way.


  • 1 pound skinless, boneless,chicken breast
  • 1cup sliced carrots
  • 1 cup frozen green peas
  • 1 cup celery, sliced
  • 1/3 cup butter
  • 1/3 cup onion, chopped
  • 1/3 cup flour
  • Salt and Pepper
  • 1 1/3 cups chicken broth
  • 2/3 cup milk
  • 2 unbaked pie crust


  1. Preheat oven to 425
  2. In a saucepan, combine chicken, carrots, peas, and celery. Add enough water to cover the veggies and boil for 15 minutes.
  3. Remove from heat, drain and put to the side
  4. In the saucepan over medium heat, cook onions in the butter until soft. Stir in flour, salt, and pepper Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
  5. Place the chicken mixture in bottom pie crust. Pour the hot liquid mixture over the chicken mixture.
  6. Cover with top crust, seal edges, and cut away any un-needed dough.
  7. Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

OMG!! Do you guys understand what is happening? We are making a no bake peanut butter pie!! This is amazing!! I have always loved peanut butter pie. It is my favorite no bake pie. It taste like Reese’s Peanut Butter Cups, its creamy and it melts in your mouth!!

Some people make their peanut butter pie in the oven. That is good but by putting it in the freezer, when you put it ion your mouth it melts and taste so good. So what I did, I added a few extra ingredients to make it look pretty and taste great. A great combination is chocolate and peanut butter, so first I spread on some whip cream, then drizzled on chocolate sauce and topped with chopped peanut butter cups. But there are a few ways to do it. You can skip the whip cream and spread chocolate sauce across the whole thing. The chocolate acts like glue so if you chop up some peanut butter cups and put them on top. Or you can chop up a ton and cover the whole top with peanut putter cups. Or you can pipe whip cream around the pie as a border, fill it with chocolate sauce and put chopped peanut butter cups on top. Or you can do nothing at all and leave it the way it is! Every way is delicious! You can even put peanuts on top!! I have tries all ways so my pictures, some have peanuts some have whipped cream and chocolate sauce but no Reese’s.

Now, crust. Crust can make or break a pie. My favorite crust to have with a peanut butter pie is oreo. The oreo gives a great flavor with the peanut butter. Sometimes, gram cracker and give off a cinnamon flavor which is disgusting with a peanut butter pie. Oreo pie has some sweetness but it doesn’t over power the pie. When you get a bite of everything together, it is delicious!! If you rather use a original pie crust go ahead but trust me it taste better with a oreo. OH, Wait a minute. This recipe makes two 9 inch pies. You can buy one oreo and one original pie crust and see which one you like better! Perfect idea! I’M a genius! When I was younger we would have taste test of everything. This past 4th of July we had a taste test of whip cream.

Lets GO!


  • 1 (8 oz) package of cream cheese
  • 1 1/2 cups confection’s sugar
  • 1 cup peanut butter
  • 1 cup milk
  • 1 package frozen whipped topping
  • 2 9 inch oreo crust
  • 1 can whip cream
  • 1 bottle chocolate sauce
  • 8 Reese’s Peanut Butter Cups, chopped


  1. Beat together cream cheese and confectioners’ sugar. Mix in peanut butter and milk. Beat until smooth. Mix in whipped topping.
  2. Spoon into two 9 inch oreo crust, cover, and freeze until firm.
  3. Top with Whipped cream, drizzle with chocolate sauce and chopped Reese’s

Red, White, and Blueberry Cheesecake Pie!

Cheesecake!! I count cheesecake as a pie and out of all the pies out there, no-bake, fruit, custard, nut, etc this is my favorite! You don’t get how much I love cheesecake!! There is nothing else like cheesecake!! Rich and Creamy, you just gotta love it!!! But this is not your average cheesecake! This has the texture and taste of cheesecake but you make and bake it like a pie. This is by far the easiest cheesecake/pie I have ever made!!!I used an already made crust, it is easy to make the filling, just mix it all together, and bake! To make it patriotic, I spread strawberry jam on it and put some nice fresh blueberries the shape of a star! Now I can bring it to my 4th of July Party without making a huge deal!! I love doing stuff like that!! Get a normal recipe you have used before and change it the slightest bit to make it more in season. I changed red velvet cupcakes to purple velvet with black frosting and white sprinkles for the Ravins!! But I used my mom’s red velvet cake recipe! I have so many recipes I use for 4th of July that I can’t post even 1/4  of them!! You don’t know how hard it id just to make one post!! You gotta type, save, edit, add pictures, add gadgets, tag, categorize, and I like to request feedback so one post can take me hours!! That is why I don’t post 4 times a day like some other blogs do! I also gotta think about what recipes I’m gonna post. After this I am gonna do some sides and maybe some main dishes then go back to dessert. Dessert is my favorite thing about 4trh of July! Its where I can really get creative! You know how they say “Art is Food”, well not for me!! I suck at art. I always hated the class and I am a terrible artist. But if I decorated a cake, I can do it fairly well.To me, art is not food, food is art! I love decorating and making really pretty presentations with food!! Its what I live for!

How is everybody’s 4th of July coming?  I am having a HUGE cookout later and a ton of stuff for dessert. My whole family is here and my dad bought two types of whipped cream so we could have a taste test at dessert! There is already whip cream on the pies but he bough a ton of ice cream!! I am sooooooooooooooooooooooo excited!! What is everybody else doing? I would love to know so please wright a comment or reply!! I have more parties coming up over the weekend so I will still post 4th of July recipes through out the week. I have 2 parties, one on Sunday, one nest Saturday! So I will keep on posting!   • 8 sheets phyllo sheets
  • 1/4 cup butter, softened
  • 2 pkgs cream cheese
  • 1/2 cup white sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 2 cups fresh blueberries
  • 1/2 cup strawberry jelly


  1. Preheat oven to 425
  2. Place a phyllo dough on a flat clean surface , brush with melted butter, and cover with another piece of phyllo. Repeat until all 8 sheets are used. Using kitchen scissors, cut layered phyllo into a 12- to 13-inch circle. Carefully press circle into a greased 9-inch pie pan. Bake in preheated oven until edges are just golden, 6 to 8 minutes,cool on a wire rack. Reduce oven temperature to 350
  3. In a medium bowl, beat cream cheese, sugar, and vanilla with an electric mixer until  fluffy. Beat in eggs until well combined. Fold in 1 cup of blueberries. Pour filling into  crust.
  4. Bake at 350 until set, 40 to 50 minutes.Cool
  5. In a small bowl, beat jelly until smooth; spread over cheese filling. Arrange 1 cup blueberries on top in a star

There is nothing better then fresh picked fruit. Me, my sisters, and grandma used to go blueberry picking all the time. We would have at least 3 pounds of blueberries each time. We would try to make blueberry pastries. I would be eating yougurt and blueberries every day for breakfast!! But my favorite thing we made was this blueberry pie! I will say, the blueberries make a sauce type thing in the pie. They make a sauce when  they get reduced in the heat from the oven. It is so good. I like serving this with some ice cream. The cold absorbs the heat and its like blueberry ice cream!! I love pie. Pie is heaven. I like it then most kinds of cake. Its not to sweet but it bring a nice cozy feeling. It is the number one comfort food! I eat anything to chocolate cream pie to apple to peach! I love pie!! When ever I decided to make a pie it takes my over an hour to find out witch one I want to make! Like do I want a fruit pie, a chocolate pie, a cheesecake? Just what do I want! This is delicious and easy to make! I have a very bust sceduale. I don’t know if y’all know this but I play advanced volleyball on a club team. I also do swim classes everyday. Besides that I cook and bake all the time!! Now you know what I do, I’m not trying to complain but I have been busy. Its the best of the best feeling to come home and have a fresh blueberry pie ready for baking after a long day! All I want is pie and to come home and have one, its a great feeling. M,y dad was never a huge cake fan. He didn’t like the sweetness but he loved pie. Instead of cake we ate pie so pie has a place in my heart. Wow, that was a really dramatic sentence. Aw well, I’m a drama queen sometimes. But I’m not kidding its nice to have a slice of pie (or two)  after a hard day. I love eating after my workouts!!


Lets talk presentation. It you make the dough from scratch, you can double it and put another layer on top of the filling. If you buy it, just put the filling in then bake it. You can do the weaving thing if you want to. What ever you want. I like to have a pie crust on top as well, that is just me because I love crust! To be honest, most fruit pies a I put a top layer of crust on. I just noticed that when I thought of that! Funny how things work out sometimes out. Lets do this thing!



  • 3/4 cup sugar
  • 3 tablespoons of cornstarch
  • 1 tsp of cinnamon
  • 4 cups blueberries
  • 1 pie crust, homemade or bought or an extra one for a top layer
  • 1 tablespoon butter



  1. Preheat oven to 425
  2. Mix sugar, cornstarch, salt, and cinnamon, and sprinkle over the blueberries.
  3. Line pie dish
    with a pie crust. Pour berry mixture into the crust, and put sliced butter on top
  4. Bake pie on lower shelf of oven for about 50 minutes, or until crust is golden brown.


Fudgy Chocolate Cream Pie with Cool Whip

Wow!! Rich Fudgy Chocolate Filling with an Oreo crust and Cool Whip!! Where to begin! Lets start with thechocolate Cream!

As y’all know, I love chocolate!! I have ate things that are really chocolate fudge, sauce, ice cream, cake, bars, and brownies staked on top of each other no joke! I love rich chocolate!! You don’t want to see me on halloween! It takes my days to get back to my normal sleeping scheduale after my sugar high!! Its awesome! You know how sometimes a filling or frosting can be overally heavy?  When I was younger, me and my friend Malina made these cupcakes and instead of making frosting, we made pudding. It was good but I like light fluffy type frosting, the pudding was dense and heavy. This is a little on the heavy side so I added some Cool Whip!


The Cool Whip really helps!! It gives it that extra flavor and it has the light fluffy flavor! The cool whip is optional but I suggest you do it. It gives the pie more flavor! The cool whip goes so nice with the pie crust. Since the pie crust is flaky it absorbs the flavor of the cool whip. I would break the crust into pieces and dip them into cool whip if I could!! I would love it!! With the extra layer of chocolate to settle it is awesome! The chocolate gets in the crust to! To me, pie is basic, a crust with a filling and a topping. I like to keep my pies under 7 layers so all the flavors are concentrated and can get soaked into each other. Thats just my personal thing though. Get creatice and make the pies how ever you want!

  • 1 original pie crust, baked
  • 1 1/4 cups white sugar
  • 2 tablespoons of all purpose flour
  • 2 tablespoons of corn starch
  • 1/4 tsp of salt
  • 1 1/2 cups of milk
  • 4 egg yolks
  • 2 squares unsweetened chocolate
  • 1 tablespoon of butter
  • 1 tsp vanilla extract
  • 1 container of Cool Whip ( Optional)


  1. In medium a

    saucepan, mix the  sugar, flour, cornstarch and salt.

  2. In a medium bowl,

    beat milk and egg yolks until smooth. Gradually stir into sugar

    mixture. Stir constantly over medium heat until mixture thickens and

    comes to a full boil. Boil and stir for one minute.

  3. Remove from heat and stir in chocolate, butter and vanilla. Stir until melted.
  4. Pour into crust
  5. Spread cool whip on top
