Who doesn’t love some good old buttermilk pancakes?? These are no ordinary buttermilk pancakes, they are extra fluffy and taste way better than any other buttermilk pancakes. And I am not just saying that cause I made them. But no joke, these things are so good, not as good as chocolate chip pancakes, but chocolate chip has chocolate in the, it’s really no comparison. But with that said, these are still amazing!!!

So you know in the winter if it snows a lot you get a delay? Well I hate those. They completely mess up my schedule, and whats the point of having like 30 minute classes and lunch as soon as you get to school. I go to wake up at 6:30am on a daily basis to go to work, then I leave. But with these delays, my family have to go to work if they can’t get off, me I can just reschedule my day. I don’t like to but you do what you gotta do. But there is one good thing about these delays, I have to stay home for an extra like 2 hours. That is a perfect amount of time for making some fresh and fluffy buttermilk pancakes! I bake a lot so I have buttermilk just in my house, if it’s snowing and you don’t have buttermilk and can’t get to a store, just put in regular milk. They will not be buttermilk pancakes, they will be plain. But they will still be extra fluffy and taste really good!!!

I like my pancakes (and waffles) really fluffy. So I put in extra baking powder and adjusted the other ingredients and came up with a really fluffy pancake!

This batter makes 10 servings of pancakes. If you can’t tell, that is a lot of pancakes!! You can freeze the batter and make it at a later date, or you can make all the pancakes and freeze the pancakes. Or you can keep it in the fridge for a few days. If you want to make the rest of the pancakes in the next 3 days, put the batter in the fridge. If you want to make it later, put it in the freezer. If you look down at the ingredients, everything has like a cup and a tablespoon, sorry about that, its what you gotta do to make them taste good!

I make a big breakfast once in a while, and I admit, I go all out. I serve this with scrambled eggs, fruit, bacon, ham, sausage, and muffins. Any of those will be good with it. I don’t do this but my grandpa used to, I would make sweet sausage, like marinate it in maple syrup and cook it. And he would put it in the middle of his pancake and eat it like a omlet. Actually,m it taste really good with a buttermilk pancake.

 

Ingredients-

  • 4 eggs
  • 1 1/4 cup milk
  • 1/4 cup and one tablespoon of butter
  • 4 cups and 2 tablespoons buttermilk
  • 4 cups and 2 tablespoons all-purpose flour
  • 1 tablespoon and 1 1/4 tsp of baking soda
  • 1 tablespoon and 1 1/4 tsp of baking powder
  • 1/4 cup sugar

Directions-

  1. In a large bowl, whisk together the eggs, milk, butter and buttermilk.
  2. Combine the flour, baking powder, baking soda and sugar, stir into the wet ingredients until blended.
  3. Heat a skillet over medium heat, and spray with cooking spray. Pour 1/4 cup of batter onto the skillet, and cook until bubbles appear on the top. Flip with a spatula, and cook until browned on the other side. Do the same with remaining batter.

Strawberry and Feta Spinach Salad

-Light and refreshing with a little crunch, a perfect salad!

Ingredients-

  • 1/2 cup white sugar
  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 1/2 tsp paprika
  • 1/4 tsp Worcestershire sauce
  • 1 tablespoon white onion, minced
  • 10 oz fresh washed spinach
  • 1 quart strawberries, washed and cut in half
  • 1/4 cup slightly roasted pecans
  • 1/4 cup crumbled feta cheese

Directions-

  1. In a medium bowl, whisk
    together the sugar, olive oil, vinegar,
    paprika, Worcestershire sauce and onion. Cover, and chill for one hour.
  2. In a bowl, combine the spinach, strawberries, feta cheese, and pecans. Pour dressing over
    salad, toss. Refrigerate 10-15 minutes before serving

Summer is coming to an end so I am making shore I get all my smoothies in. My favorite smoothie is a plain fresh strawberry banana  smoothie. As has, always will. I had my first one in Disney worlds when I was 4. I will never forget that day!! Drinking my first strawberry Banana smoothie wit Mickey Mouse at my side, fun. I want to go back to Disney world with my family! I think we are going back to Mexico next year. Anyway, I don’t like drinking smoothies in the winter, that is hot coco time!

This is fresh beyond compare! I don’t like adding a lot of sugar to any of my smoothies. I like fresh natural ingredients. yogurt, fruit, and ice!! Makes a great smoothie.! This smoothie has about 110 calories and 16 grams of sugar per serving. You can adjust if you want. You can double the fruit with the same amount of sugar, it will give a fruit smoothie and you can’t even taste the sweetness. The way I’m posting it is the best!

It hasn’t been hot here!! Its like 76 degrees right now. But its still nice to have a smoothie!! When I was younger, I would put a strawberry,banana slice, and one of those cute mini umbrellas that they put in your drinks on vacation!

I will never think any of my smoothies are as good as Jamba Juice or any smoothie place. They are pro smoothie makers. I don’t even have a smoothie place near my house, that is why I make smoothies so much.  But this is close! Here is a secret, take away the yogurt and put ice cream instead and put in like 1/2 cup milk, and a little more sugar. You can make a milkshake. But it is way better as a smoothie!!

Its cold and refreshing and every thing you want your smoothie!!! Are y’all bored? I am. So, um how has your day been going? I went to this new restaurant near my house and it was so good!!! I got  the best lobster mac and cheese!!! Better than mine, and I make good lobster mac and cheese. And though I was full, when I got home and started this post, I was craving a smoothie!!

What can be better?

Ingredients-

  • 1 cup strawberries
  • 1 banana, sliced
  • 1 cup plain yogurt
  • 1 cup orange juice
  • 1 cup ice
  • 2 tablespoons plus one tsp of sugar

Directions-

  1. Add all ingredients to a blender
  2. Mix on high speed till smooth
  3. Pour and enjoy!

Chcoclate Chip Ice Cream

There is one thing that is impossible to hate, ice cream. I have had every Ice cream brand in my store. Nothing is as good as homemade ice cream. Its so creamy and you know what is going into your ice cream. I will just be eating chocolate ice cream and its like 400 calories per 1/4 cup and It makes no sense to me. I just don’t get it, I doubt there is even chocolate in that ice cream.

So, you guys no how I am a chocolate freak. The original recipe is just chocolate ice cream. I wanted Chocolate Chip so I made chocolate chip. This is beyond creamy so its nice to have some chocolate chips as a crunch texture. Delicious! If you don’t like a bit of texture in your ice cream, then leave out the chocolate chips. I love it so much!  If you are having a birthday party and you need ice cream, make this it is cheaper and yummier. Is yummier a word?/ I have never been good at spelling, or grammer. Aw well, on this blog it is. The president has it declared!

I love ice cream!!! The best time to have ice cream is a hot summer day and summer is coming to an end so hurry it up!! Trust me, you won’t be sorry. This make 4 cups of ice cream.  You can double this recipe. Obvilously, its freezer safe cause its ice cream. You can go to the freezer section in your grocery store and by cake or waffle cones, some hot fudge and toppings, make some delicious ice cream sundaes. It is so good!! Kids love this!! I make it for my family all the time!! They all love it. It’s rich and creamy, whats not too love??

When I eat this, I am like a kid in the candy store. My family loves ice cream!! I like to double this so we have enough for at least 3-4 days. Oh!!!!!!!!!! I have an idea!! You should buy waffle bowls and put scoops of ice cream in that!! YUM!!! Anyway, back to topic, this makes 4 cups but I could eat 4 cups of this by myself in less then 2 hours!! Its that good!! You will make this once and never buy ice cream again!! I’m not kidding!! I haven’t bought ice cream in a while!!

Lets go, my mouth is watering.

Ingredients-

  • 3/4 cup sugar
  • 1 cup milk
  • 2 tablespoons unsweetened coco
  • 3 egg yolks, lightly beaten
  • 2 ounces, semisweet chocolate
  • 2 cups heavy cream
  • 1 tsp vanilla extract.
  • 2 cups mini semi-sweet chocolate chips

Directions-

  1. Combine sugar, milk, salt, and cocoa powder in a saucepan over medium heat, stirring constantly.
  2. Bring to a simmer. Put the egg yolks into a small bowl. Gradually stir in about 1/2 cup of the hot liquid. and return to the saucepan. Heat until thickened Remove from the heat, and stir in the chopped chocolate until chocolate is melted. Pour into a chilled bowl, and refrigerate for about two hours until cold, stirring occasionally.
  3. When chocolate mixture has completely cooled, stir in the cream, and vanilla. Pour into an ice cream maker, freeze

Deviled Eggs

I don’t like deviled eggs. They taste bad. Plus,they stink. But, on be half of people who like deviled eggs, apparently these are the best deviled eggs I have ever made. I make these for ever party. Its a great side or appetizer. Um, there isn’t much more for me to say about these. Um, yeh. Sorry this was kinda boring. Well, lets just get started.

Ingredients-

  • 8 eggs
  • 1/2 tsp prepared mustard
  • 1 tablespoon salad dressing, creamy
  • Salt and Pepper
  • 1 pinch Paprika

Directions-

  1. Put eggs in
    saucepan and cover with water. Bring to boil. Cover, remove from heat,
    and let eggs sit in the hot water for 10-12 minutes. Remove from hot
    water and cool.
  2. Peel and cut
    in half lengthwise. Remove yolks and combine with mustard, salad
    dressing and salt and pepper. Mix together until smooth and creamy.
  3. Refill each egg half with the yolk mixture and sprinkle with the  paprika.

Three Meat Sliders

Lets start by saying, this is amazing!! I love it!!! I got the idea from meatloaf. My mom makes this amazing meatloaf that has ground pork,bee, and veal in it. I decided, what if I did that in a slider. If was amazing! Those three meats go amazing beyond amazing together. You will be surprised!  Its so moist and juicy!! So I like to serve it on the bun, but then put it on a plate with a bunch of condiments are the side. This way my guest can put on what ever they want. I will give you a list of some good things to put on

  • Sauteed Onions
  • Roasted Peppers
  • Sauteed Mushrooms
  • Fresh Basil
  • Provolone cheese
  • lettuce
  • Tomato

Those are just my personal favorites. I always Leave out some sauces to but personaly, I don’t let BBQ sauce on this! Bread Wise, simple answer.Mini Potato rolls. You can buy them in a pack of 24 and they are the most common used buns for burgers. They aren’t sweet just buttery so the flavor won’t affect the meat. It is delicious! Every body loves a good burger they say, but everybody loves a great burger even more!! So make this!!

This is great for a party appetizer, a super bowl, or dinner. Make sure they are served no later then 10 minutes after burger gets off the grill. If you wait longer they will dry out and will lose all the flavor. Then they will taste terrible!! I will tell you, if you have eaten a dried out and flavorless burger, its not fun!

Okay, well lets get grilling. By the way that is a really fun game!! It is a shockwave game and there are 100 levels and 20 bonus levels. You grill and cook and serve a ton of food!! Its is hard, really hard on top levels but a ton of fun!! There are other games from the same company that is the same idea but you don’t grill. Lets get cooking, lets get baking, lets get drinking! Fun,Fun,Fun.

Okay, now we are really gonna get grilling!!

Ingredients-

  • 1 pound Ground Beef
  • 1 pound Ground Veal
  • 1 pound ground pork
  • 16 mini slider rolls
  • Any toppings you want to put on

Directions-

  1. In a large bowl combine beef,veal, and pork
  2. Using your hands, blend the two meats together and form into one large ball.
  3. Press into 3 inch patties
  4. In a large skillet over medium-high heat, pan fry 4 or 5 sliders at a time.
  5. Cook in till desired doneness
  6. Slice the buns and top the sliders with your favorite condiments.!

 

 

BBQ Pork Sliders

I love sliders. It is an easy appetizer that I can make in a matter of minutes. Everybody loves them, they are fun and easy I love them!!! I love to have multiple sliders at my parties. That way if one person  doesn’t like ham, they cam pick up a nice roasted turkey slider. So I always make sure mall the sliders I make for a big party are easy and not time-consuming so I can make a lot!!

I love BBQ pork, the first time I had it was at my friend Malina’s house. I bite into that juicy BBQ pork and I almost had a heart attack!!!!!!!! It was delicious. I told my family about it and we started making it. I still eat it with my family today. When ever I have a party. I make these. They are super easy just put some stuff in a crock pot, leave it in the pot for a while, slap it on a bun. When they are in the crock pot, all the flavors do that condensation and it absorbs into the meat. It cooks in its own air. So it taste amazing!! Cooked in a sweet and spicy BBQ sauce it taste amazing!! Wow, I use the word amazing a lot don’t I ?? I never noticed this. Do I do it in all my post? Ok, I’m not gonna do it anymore. For future reference tell me if I’m doing this.

Lets talk bread. Everybody knows you can’t have a good sandwich with a bad roll. The roll is what makes the sandwich, you have a dry or stale roll, your sandwich is gonna suck. I like to use a hamburger sesame seed bun. I don’t like poppy seeds period. They taste terrible and get every where. Sesame seeds taste good with it. Or a plain bun. You can use store bought (or homemade) dinner rolls too! What ever goes with your flow.

So, you can make these when ever you want but I always make them for a party. So, who is ready to party? I love parties!! Center pieces, music, food. I love them!!! I remember when I was a kid and had my birthday parties, I always wanted to make everything that had to do with food. I made everything from pizza to cupcakes. It made me happy. Speaking o birthdays, mine is September 12 so make sure to get my a gift! Just kidding, but you still should

OK LETS GO!!!

Ingredients-

  • 1 pound shoulder Pork Roast
  • 1/2 cup BBQ sauce
  • 1/3 cup water
  • 2 tsp honey
  • 2 tsp fresh grated orange zest
  • 1/4 tsp thyme leaves
  • Salt and Pepper
  • 8 Sesame seed Buns

Directions-

  1. Cut roast into 3 to 4 pieces. Place pork in a greased slow cooker. Combine remaining ingredients and put over pork.
  2. Cover and cook on HIGH for 3 to 4 hours or LOW for 6 to 7 hours until pork is very
    tender. Shred Serve on rolls
